Handcrafted. The 'old fashioned' way, at least 1500BC old.
By searching the local farmer's markets for quality New Zealand produce.
No yeast, no additives, no preservatives.
Our precious and alive sourdough starter was brought into being in the glorious summer of 2013 in sunny Otaki, New Zealand.
Our mission is to preserve the ancient tradition of sourdough bread making.
Finally, we know that Rome wasn't built in a day - so we don't rush our bread and let the dough ferment for at least 12 hours(up to 36!) before we even think of baking and making it edible.
Easily digested, nutritious and flavoursome are all ways you will hear our bread being praised. Staying moist and fresh naturally, is what makes this bread the game changer you didn't know you needed. Pies? We make pies too. Other foods subject to availability.
Delivered to your door for $3.80 in the Takapuna, Silverdale and Auckland City area.
All deliveries in the greater Auckland region will be priced based on weight:
"Sourdough is more digestible than standard loaves and more nutritious too.
Lactic acids make the vitamins and minerals in the flour more available to the body by helping neutralise the phytates in flour that would interfere with their absorption.
The acids slow down the rate at which glucose is released into the blood-stream and lower the bread's glycaemic index (GI), so it doesn't cause undesirable spikes in insulin.
They also render the gluten in flour more digestible and less likely to cause food intolerance." Rosie Sykes(Head chef of Fitzbillies and co-author of The Kitchen Revolution)
Sourdough/Leaven bread contains fewer calories and carbohydrates than other breads like for like, because some of the starches and sugars are consumed during the fermentation period.
It's a solid bread mostly dense and moist. Our bread is not light and fluffy.
